Diving Into the French Dip at La Cuisine
Spring in Ocala doesn’t always arrive in bright blue skies. Sometimes it comes quietly, with a soft morning drizzle, still air, and that perfect in-between temperature that makes you want to linger outdoors just a little longer. On this particular morning, the air hovered around 72 degrees, humid but gentle, the kind of weather that feels like an invitation.
By 11 a.m., when the doors opened at La Cuisine, several groups filtered inside almost immediately. We chose the patio instead. The tables were still faintly damp from the earlier rain, the sky a muted gray, and for a while, we had the entire outdoor space to ourselves. It felt like a private oasis. A space to be unhurried, unbothered, entirely present.
Brunch in the spring carries a different rhythm. It’s less about celebration and more about re-emergence. After cooler months spent mostly indoors, there’s something restorative about sitting outside again, coffee ~ or a mimosa ~ in hand, conversation stretching easily across the table. That morning, that rhythm was anchored by a new addition to the menu: the French Dip.
At first glance, it’s a sandwich. But like many things rooted in French tradition, the beauty is in the balance and technique.
The first thing I notice is the perfectly golden baguette. Crisp at first bite but yielding to a soft, chewy interior that held its structure without overpowering the fillings. Inside, ribbons of grilled sliced sirloin layered with caramelized onions and melted Swiss cheese melted in my mouth, while a handful of peppery arugula cut through the richness with a fresh, citrusy note. Every element felt intentional.
Then there was the au jus. Dark and deeply savory, it carried an intense, concentrated beef flavor that transformed each dip into something luxurious. It was the quiet backbone of the dish, grounding it in the kind of depth that defines classic French cooking.
On the side, parmesan truffle fries blurred the line between comfort and indulgence, fragrant, flecked with herbs, and just decadent enough to embody the spirit of brunch. Each bite delivered an intense hit of umami, followed by the nutty flavor of parmesan.
While the French Dip may be new to the menu, the foundation it rests on is anything but. La Cuisine opened in 2009, the vision of co-owners Patrice Perron and Elodie Gattacieca, who set out to bring a touch of Parisian sensibility to Ocala’s historic downtown. Nearly two decades later, that vision has matured into something woven into the fabric of the city.
In conversation, Patrice spoke about the evolution of the restaurant over the years. He shared how the physical space has expanded thoughtfully and how the menu has evolved alongside the community it serves. What began as an intimate French bistro has adapted without losing its identity. That consistency has not gone unnoticed; after earning nine consecutive Golden Spoon awards, the restaurant was inducted into Florida Trend magazine’s Golden Spoon Hall of Fame in 2019, a testament to both craftsmanship and staying power.
As the morning stretched on, the patio slowly filled and the gray sky held steady overhead.
There was no wind, no urgency, just the soft hum of conversation and the lingering comfort of being outdoors again. Spring invites us back to the table, back to one another, back to meals that ask us to slow down. There is something fitting about enjoying this dish rooted in French culinary tradition in a restaurant that has quietly endured. Downtown Ocala continues to transform, yet La Cuisine remains a steady presence, refined but welcoming, classic yet responsive to change.
